Stuck in Atlanta during ski season? Murphy's (997 Virginia Ave. N.E., Atlanta) has a virtual escape with its Ski Slope holiday cocktail. Sweet somethings, including bittersweet chocolate, powdered sugar, cinnamon and peppermint schnapps, help make up this belly warmer. Bartenders stay in step with the season with a candy cane garnish.

GLOBAL WARMING
Spirits has been receiving holiday gifts in the form of recipes from bartenders across the country. Michael Becker of Portland Steak and Chophouse (121 S.W. Third Ave., Portland, Ore.) has a drink worthy of Al Gore. The Global Warmer combines mint leaves, DeKuyper Tropical Mango liqueur, lime sour mix, DeKuyper triple sec and Basil Hayden's Bourbon. Becker pours it over ice and then shakes and strains it into a martini glass. A mint leaf garnish and a lime twist follow.
LIQUID ASSETS
Derek O'Neill of Prime One Twelve Restaurant (112 Ocean Drive, Miami Beach) sent us his liquid take on the economy. The Adjustable Rate is unsuspecting with Hornitos Blanco tequila, Cruzan blackberry rum and pineapple coconut liqueur mixed with pineapple and orange juices. He shakes everything over ice and strains into a highball glass with a pineapple garnish.

IN THE DRINK
Murphy's Ski Slope
1/2 oz. bittersweet chocolate
1 cup cream
1/2 cup whole milk
1 tbsp. powdered sugar
Pinch of salt
Pinch of cinnamon
1 tsp. of unsalted butter
1 cup peppermint schnapps
Simmer all ingredients together except chocolate, butter and schnapps. When mixture is at a boil, remove from heat and add chocolate and butter. Stir until smooth. Then stir in peppermint schnapps. Serves six to eight people.
